An animal skin is a piece of armour that is functionally identical to a robe: 2 base AC, no encumbrance rating. It takes 3 turns to wear or remove.
If your character begins with animal skin for armor, you may want to consider switching to a robe as soon as possible because it may have enchantments and/or a useful ego. Animal skins are not normally generated with egos outside of a few special vaults, including some ice caves.
Desirability
It's the same thing as a robe but far less likely to have a good ego. Usually a robe or dragon armour will be preferable.
History
Prior to 0.12, several monsters (sheep, yak, death yak) could leave these when butchered.
