The Spellcasting skill determines how proficient a character is at casting spells from memory. A higher Spellcasting level gives your character more spell levels, increases your max MP, and slightly improves spell power of your spells. It has a minor effect on spell success rate too, but increasing skill in a spell's individual magic schools is better for raising its success rate.
Note that the max MP increase granted by Spellcasting is not cumulative with that of Invocations; only the highest of the two is used. For this purpose, Spellcasting is twice as effective.

History
